ThIs might be my favorite recipe I've done...
I went to Memphis for the first time last year, and other than the BBQ, the Fried Chicken is the next best thing. I checked out Miss Polly's on Beale Street and had Chicken and Waffles for the first time, and it was awesome!
A couple weeks ago I wanted to try my hand at Chicken and Waffles, but tried it a little different.
To start off, I took a half of chicken and cut each piece out (wing, breast, thigh, and leg). I ran each piece through the flour mix followed by the egg wash. And then I tried something a little different... I took Waffle Crisp Cereal and crushed them up pretty fine and then covered each piece in the cereal. Next step, straight to the fryer. I had it set for about 350 and cooked all 4 pieces together for about 12 minutes.
I also had some Pork Belly going over night that was ready to serve. I usually cook a 3lb piece of pork belly (with skin removed), for about 10-12 hours at 200*, or until internal temp reaches 198-200. I season the meat side with Get Twisted Rub and the fat side with X-Factor Rub. Let it rest, covered, for about an hour and then slice it in about 1/4" wide pieces, and serve!
And the base of the recipe was homemade pancakes (didn't feel like getting the waffle iron out). I just grabbed a waffle recipe from Allrecipes.com and use that for the pancakes.
For the sauce, I took equal parts of Melon Madness Sauceand Maple Syrup, and put them both in a sauce pan and brought them to a boil and then simmered for about 20-30 minutes.
I layer it on the plate starting with pancakes, then pork belly and "Waffle Chicken" topped with Melon MadnessSyrup, and enjoy!
